Healthy, Low Calorie, Sweet Water Biscuits

Sweet Water Biscuits 🍪
I've been on the hunt for low-calorie, healthy snacks (emphasis on healthy as many "low calorie" snacks are high in sugar and contain a lot of added preservatives etc.). I didn't have much luck so I decided to make my own! These cookies/biscuits are very light and can be layered to form different types of desserts. I like to pair mine with whipped cream and jam - just like a strawberry shortcake but guilt-free 😉.
Ingredients
- 100g Low-fat Greek yoghurt 
- sweetener to taste 
- 2 eggs 
- 1tsp vanilla extract 
- 30g cornflour 
- 300g plain flour 
- pinch of salt 
Method
STEP 1
Beat the yoghurt and sweetener with an electric whisk for 4 mins until light and fluffy. Beat in the eggs, one at a time, then add the vanilla. Whisk in the cornflour and plain flour until the mixture becomes a dough. Shape into desired sizes and place on a tray with butter or low cal spray.
STEP 2
Bake in Airfryer at 135 or 140 degrees until golden brown (check and turn them often as they cook very quickly!).
